A very distinctive, complex bouquet dominated by notes derived from skin contact: ripe peach, quince, apricot, pollen, wild herbs, nuances of vermouth. The palate is the main distinguishing feature of this wine. It is not made for simplicity, but for gastronomy. Seriously tannic, ample and tense. The acidity is high, buoyant, lending the wine energy and freshness which balances the tannins and density. Ripe stone fruits (peach, yellow plum), transitioning into mineral, slightly saline notes. The finish is very long, persistent, dry, with dominant tannins and a mineral echo.
