The wine displays a fine and persistent stream of bubbles in the glass, which is remarkable for a sparkling wine fermented with natural yeasts and, moreover, without any addition of sulfur. The nose opens with notes of pastry, dried berries such as prunes and figs, and toasted hazelnut. The palate is very lively with vibrant acidity, characteristic of the Ganevat style. The finish is impressively long with a savory, mineral quality.
