Louis Mitjavile
The first harvest of Domaine de l’Aurage was gathered in 2007. This new estate is owned and managed by Louis Mitjavile, a talented winemaker deeply influenced by the philosophy of his father, François Mitjavile—the legendary pioneer behind estates like Tertre Rôteboeuf in Saint-Émilion and Roc de Cambes in Côtes de Bourg. In the wine world, Louis earned an exceptional reputation as a consultant for many successful wineries before launching his own project. The search for the perfect vineyard location finally led him to Côtes de Castillon, bordering Saint-Émilion, where he discovered clay-limestone soils—exactly what he had been looking for.His primary goal is to harvest ultra-ripe grapes that express intense aromas of black fruits (almost candied) alongside perfectly ripe tannins. Only then can the wine achieve its seductive, elegant, and textured character. Vinification: Gentle extraction to maximize the grape’s potential. Aging: 18 months in new oak barrels for gradual stabilization. Result: A balanced wine with a rich, elegant nose and palate, and a long, lingering finish.
