Francois Carillon

A new chapter in winemaking opened for François Carillon in 2010, when, following the division of the family domain, he inherited prestigious vineyards in Puligny-Montrachet and Chassagne-Montrachet, as well as a négociant business. A five-century-old tradition of winemaking continues in the family: François’s ancestors cultivated the lands of Puligny-Montrachet for centuries. His ambitious plans include expanding the holdings and gradually phasing out the use of purchased grapes. With thirty years of experience as a chief vineyard manager, François creates exceptional harvests. However, his activities now extend far beyond agronomy — he personally oversees all processes in the cellar, implementing bold experiments that were previously unthinkable within the framework of a traditional family estate. An innovative approach to winemaking is evident in the special care taken to protect wines from oxidation. The use of carbon dioxide during vinification has significantly reduced the use of sulfur dioxide, a traditional preservative. The result of this approach is the creation of unique wines that reflect the true character of the terroir and the skill of a modern winemaker who successfully combines centuries-old traditions with innovative technologies.
