Domaine Don-Grellet was founded in 1986 by Éric Don and Édith Grellet in Flavigny, the heart of Côte de Blancs. At that moment, they made a pivotal decision—to start producing their own Champagne. In 2010, Adrien joined the estate and later took full management from his parents. He changed the entire approach—moving away from heavy, high-dosage Champagnes toward more airy, terroir-driven wines with minimal dosage."In Champagne, I dislike strictness and tension, especially in Côte de Blancs. I still strive for richness and texture while maintaining finesse and minerality. That’s why my priority is optimal and expressive fruit ripeness," says Adrien.Today, Adrien is one of the most talented young winemakers in Côte de Blancs, having received the "Best Winemaker" award in 2017. Currently, Domaine Don-Grellet owns vineyards totaling about 6 hectares, located on the best plots in Cramant, Cuis, Côte des Sézanne, Chouilly, and Avenay-Val d'Or. Old vines over 40 years old grow on chalky soils of varying structure and density (different types of chalk—powdery, dense, loose—depending on the parcel).
