The bouquet of this Sekt is incredibly complex and bears no resemblance to simple floral-fruity sparkling wines. Notes of melon, wet stones, white peach, and green apple give way to a subtle smokiness, hints of roasted nuts, and a nuance of seashell. The palate is the wine’s defining characteristic. There is no "banality" of Weissburgunder here. It is pure, austere, and taut. Despite its apparent lightness, the wine possesses density and weight. The texture is silky, with the fine, subtle creaminess (Schmelz) characteristic of Weissburgunder, lending the wine elegance and body. The acidity is vibrant, crisp, crystalline, serving as the perfect counterpoint to the texture and giving the wine incredible drinkability. The finish is long, dry, saline, with a persistent mineral echo and a slight bitterness that only underscores its gastronomic character.
