Fanny Sabre Beaune 1er Cru Chouacheux 2019 750ml
A classic symphony of Beaune Premier Cru with a distinct hint of Pommard. Red and forest berries: raspberry, strawberry, cranberry, pomegranate juice – ripe yet fresh simultaneously. Dark nuances: black cherry, a drop of cherry liqueur (cerise ayant passé l'hiver dans du kirsch). Flowers: delicate violet (one of the key notes), dried rose petals. Spices and earthy notes: soft clove, white pepper, undergrowth, mushroom infusion, hints of chocolate and a light tobacco veil.
Moderately dense but not aggressive on entry; medium to nearly full body. The main sensation is a “fine lace” that gradually gains weight without losing its silkiness. The acidity is high, pure, and brisk – the classic nerve of Burgundian Pinot Noir. The tannins are fine-grained, “powdery,” ripe – they caress rather than grip. Cranberry, lingonberry, lime (initially), giving way to black cherry, plum jam, and serviceberry notes.
Finish is very long, clean, almost saline (a limestone‑driven mineral aftertaste). Leaves you feeling ready for the next sip.
